Sous Chef – South Asian (Indian) Restaurant

PINDIWAL is a new South Asian dining concept launching in Tallinn. It offers a vibrant, modern take on traditional flavours from across the subcontinent. Rooted in culinary authenticity and social dining, our mission is to bring people together through bold flavours, warm hospitality, and a culturally rich experience.

PINDIWAL is searching for an exceptional Sous Chef who will dynamically mirror the leadership of our Head Chef. This pivotal role ensures the seamless operation of the kitchen, stepping into complete command as needed while upholding uncompromising standards of precision, professionalism, and strategic execution. The ideal candidate will lead with resolute discipline and meticulous attention to detail, inspiring the team to excel consistently in culinary innovation and operational excellence.

Job Description

  • Act as the operational extension of the Head Chef, ensuring kitchen leadership, workflow, and food quality remain consistent at all times.
  • Supervise all kitchen activities, including mise-en-place, portioning, preparation systems, cooking, plating, and service execution.
  • Ensure compliance with all standard recipes, plating guides, yield calculations, and allergen protocols with strict accuracy.
  • Lead service during peak hours, managing station coordination, timing, and unexpected requests without compromising quality or calm.
  • Mentor and train junior kitchen staff on authentic South Asian techniques, modern adaptations, and operational standards the Head Chef sets.
  • Monitor and maintain kitchen hygiene, consistently enforcing HACCP and food safety compliance. Regularly conduct internal hygiene checks.
  • Collaborate with the Head Chef and Restaurant Manager on menu development, costing, kitchen layout optimisation, and preparation workflows.
  • Be a proactive problem-solver and decision-maker, stepping up during crises.
  • Support menu testing, staff tastings, and seasonal or special event menu implementation.

Candidate Profile

  • Must have the legal right to work in Estonia or any EU country and be available to relocate to Tallinn if based elsewhere in Europe.
  • Minimum 5 years of experience in a Sous Chef or strong Senior CDP role, preferably in a fast-paced Indian restaurant setting.
  • Deep knowledge of cuisine from across the Indian subcontinent, with an awareness of evolving culinary trends and modern street food adaptations.
  • Well-versed in HACCP guidelines and able to uphold recipe consistency, kitchen discipline, and presentation standards in the Head Chef’s absence.
  • Basic proficiency in English and at least one South Asian language (e.g., Hindi, Urdu, Punjabi) is required to ensure smooth communication within a multicultural kitchen team.
