PINDIWAL is a new South Asian dining concept launching in Tallinn. It offers a vibrant, modern take on traditional flavours from across the subcontinent. Job Description
- Prepare a wide range of traditional South Asian breads à la minute, demonstrating mastery of authentic techniques while operating tandoor, tawa, and hotplate with precision and speed.
- Adapt and develop regionally appropriate breads that align with evolving dishes and seasonal menus.
- The ideal candidate must demonstrate complete preparation and recipe knowledge across a broad range of traditional breads that represent the core expectations of this role. These include Khamiri / Patiri Roti, Butter Naan, Garlic Naan, Amritsari Kulcha, Lachha Paratha, Plain and Filled Paratha, Roomali Roti, Bhature, Missi Roti, Punjabi Puri, Ladi Pav, Pav Bhaji Bread, Vada Pav Pav, Girda, Kashmiri Kulcha, Roghni Naan, Lahori Kulcha, Sheermal, Afghani Naan, and Chapli Kebab Naan, Bun Maska.
- Must be disciplined in documenting recipes and prep methods in English for internal training and quality control.
- Train junior staff on traditional bread-making techniques and recipe execution
- Collaborate with the kitchen team to evolve the menu with seasonal or regional bread specials.
- Support broader kitchen operations with strong hands-on expertise in preparing a variety of South Asian dishes when required.
Candidate Profile
- Must have the right to work in Estonia or any EU country and be willing to relocate to Tallinn if currently based in another European location.
- Minimum 5 years of experience in the restaurant industry, demonstrating expertise in preparing a wide range of traditional South Asian breads, and supporting broader kitchen operations with hands-on knowledge in South Asian cooking.
- Working knowledge of HACCP guidelines and food safety protocols is expected.
- A working level of English is required for communication with local staff and management. Knowledge of another regional language (e.g., Hindi, Urdu, Punjabi) is advantageous.
